<li>Pour batter into bundt pan and rap pan sharply on counter to eliminate air bubbles. Bake in middle of oven until a tester comes out with just a few moist crumbs adhering, about 50 minutes. Cool cake in pan on a rack 5 minutes. Turn out onto rack and cool completely.</li>

And I make time in my life to bake for pretty much everything, but with Microeconomics and Computer Science for Business finals coming up, this is a flashback recipe. These truffles were made only out of leftover cake and white chocolate! So if you are at a holiday party and the hosts force you to take home leftovers, take home the cake and make truffles!! This way you avoid stale or dry cake. The icing centers are also a wonderful surprise! Plus, they are automatically portion controlling :)</span><br />

</div>When you hear the word truffle, what comes to mind? Smooth, creamy, dense balls of chocolate dusted with cocoa that simply melt, as you eat them one by one. However, while walking through Wegman's the other day, I was inspired to make a new kind of truffle: Goat Cheese Truffles.<br />

These truffles are sweet AND savory; creamy goat cheese is formed into balls and then rolled in spiced pecans and dried cranberries. These make perfect appetizers or toppings for salads. They are simply adorable and would be perfect for a light holiday hors-d'oeuvre.<br />
<br />
<span class="Apple-style-span" style="text-decoration: underline;"><b><span class="Apple-style-span" style="font-size: x-large;">Goat Cheese Truffles</span></b></span><br />

<ul><li>1 8 oz. Goat Cheese log, medium consistency</li>
<li>1/2 cup dried cranberries</li>
<li>1/2 cup Spiced Pecans</li>
</ul><div><ol><li>Pecans: Cover 1/2 cup of pecans in 1/4 cup maple syrup, 1/4 tsp nutmeg, 1/2 tsp cinnamon, 1/4 tsp curry powder. Cook in a skillet on medium heat until pecans have absorbed the syrup; let cool.</li>
<li>Chop cooled pecans and mix with cranberries in a small bowl</li>
<li>Roll goat cheese into 1/2 oz balls, making about 16</li>

<li>1 cup pistachios, toasted</li>
<li>6 cloves garlic</li>

<li>4 tablespoons poppy seeds</li>
<li>2 large pieces of old country bread</li>
<li>Drizzle heavy cream (optional)</li>

<li>Roast baby carrots, onions, and cloves of garlic in 1/4 cup of oil in the oven for 30-45 minutes, until caramelized and slightly blackened</li>
<li>Heat chicken stock in a large soup pot and add nuts, 2 tbs poppy seeds, and vegetables; let simmer on the lowest heat for 1-3 hours, to develop flavor</li>
<li>Blend soup with an immersion blender or in batches in a regular blender, return to low heat to serve</li>
<li>Top with poppy seed croutons and a drizzle of cream, if desired</li>
<li><b>Poppy Seed Croutons:</b> Tear bread up into cubes, cover with remaining olive oil and poppy seeds, toast in the oven at 400 for about 15 minutes until browned and crispy</li>

<li><span style="font-size: x-small;"> 0.5 cup granulated sugar + extra to sprinkle over cookies</span></li>
<li><span style="font-size: x-small;"> 1 tsp vanilla paste or extract</span></li>
<li><span style="font-size: x-small;"> 2 cups AP flour</span></li>
<li><span style="font-size: x-small;"> 1 Heath Bar crumbled into little pieces</span></li>
<span style="font-size: x-small;"></span></ul><ol><li><span style="font-size: x-small;"> </span><span style="font-size: x-small;">Mix butter and sugar for 3 minutes until creamy and fluffy with an electric mixer or dough paddle</span></li>
<li><span style="font-size: x-small;">Add vanilla paste and add flour in 1/2 cup increments, beating in between until a uniform dough has formed</span></li>
<li><span style="font-size: x-small;">Add the Heath Bar bits and fold into the dough with a spatula</span></li>
<li><span style="font-size: x-small;">Place the dough between parchment paper, rolling up the ends, and flatten four sides so you form a long rectangular brick of dough</span></li>
<li><span style="font-size: x-small;">Wrap the dough brick and refrigerate for 3-12 hours</span></li>
<li><span style="font-size: x-small;">After the dough has chilled slice the brick horizontally, forming about 20 rectangular cookies (ala slice'n'bake cookies before they sliced them for you)</span></li>

The butter and honey that ooze into every paper thin sheet of phyllo dough is all I can think about. It's funny that Greek desserts are not typically thought to be patisserie wonders, but the combinations of sweet and salty that are commonplace in all Greek dessert recipes are genious. <li class="ingredient">1 cup sugar</li>
<li class="ingredient">1/8 tsp ground cloves</li>
<li class="ingredient">1/8 tsp ground cardamom</li>
<li class="ingredient">1 cup honey</li>
<li class="ingredient">3/4 cup water</li>
<li class="ingredient">1 tbs lemon juice – fresh squeezed</li>
<li class="ingredient">2 cinnamon sticks</li>
<li class="ingredient">1 (1-inch) strip lemon zest – use a peeler to get this</li>
<li class="ERSeparator">Filling and Phyllo Dough:</li>
<li class="ingredient">3/4 lb walnuts</li>
<li class="ingredient">1/4 lb pistachios</li>
<li class="ingredient">1 teaspoon ground cinnamon</li>
<li class="ingredient">1/4 teaspoon salt</li>
<li class="ingredient">2 sticks unsalted butter (8 oz)</li>
<li class="ingredient">1 pound phyllo dough, thawed</li>
</ul><div class="ERInstructionsHeader">Instructions</div><div class="instructions"><div class="ERSeparator">The Syrup:</div><ol><li class="instruction">Combine sugar, water, honey, lemon juice, cinnamon sticks, lemon zest, cloves and cardamom in a heavy bottomedmedium saucepan. Cook over medium heat, stir with a wooden spoon until the sugar has dissolved and begins to boil. Reduce the heat to medium-low or low and cook until the syrup is slightly thickened, about 10 minutes or so. Remove the cinnamon sticks and lemon zest and pour syrup into a large glass measuring cup to cool.</li>
</ol><div class="ERSeparator">The Baklava:</div><ol><li class="instruction">Preheat the oven to 350 degrees F and place an oven rack in the center of your oven.</li>
<li class="instruction">Place walnuts and pistachios into a food processor and pulse until finely chopped.</li>
<li class="instruction">In a medium mixing bowl, combine the nuts, cinnamon, and salt and stir well to combine.</li>
<li class="instruction">In a small saucepan over low heat melt the butter.</li>
</ol><div class="ERSeparator">Now you’re ready to assemble everything.</div><ol><li class="instruction">Using a pastry brush, lightly coat a 13 by 9-inch or 15 by 10-inch baking dish with some of the melted butter.</li>
<li class="instruction">Open the package of thawed phyllo dough and lay the thin sheets on a clean work surface. Using a sharp knife (or kitchen shears) cut the phyllo sheets approximately the same size as your baking dish. Discard any scraps because it will be a mess in the kitchen if you don’t.</li>
<li class="instruction">Cover the sheets with a piece of plastic wrap and a lightly damp kitchen towel – not too wet or you’ll make your dough stick together but the sheets of phyllo dough dry out quickly if left in the air.</li>
<li class="instruction">Place the first sheet of phyllo dough in the bottom of the buttered baking dish and lightly brush with some of the melted butter.</li>
<li class="instruction">It’s okay if the dough has holes or breaks, nobody’s going to see it and you’ll have lots of other layers without holes.</li>
<li class="instruction">Repeat this procedure with 5 more sheets of phyllo, for a total of 6 layers.</li>
<li class="instruction">Measure about 3/4 cup of the nut mixture and spread the nut mixture evenly over the buttered phyllo dough.</li>
<li class="instruction">Repeat with 6 more sheets of phyllo, buttering each layer as before, and then add another 3/4 cup of the nut mixture.</li>
<li class="instruction">Continue this layering process, buttering 6 sheets of phyllo and topping each 6 sheets with 3/4 cup of the nuts, until you have used all of the nut mixture.</li>
<li class="instruction">Layer the remaining sheets of phyllo on top, buttering each layer until all of the phyllo dough has been used.</li>
<li class="instruction">That wasn’t so difficult, was it? I heard you say no. All the hard work is done – nearly.</li>
<li class="instruction">Use a sharp knife to make 4 cuts lengthwise partially through the layered phyllo at 1 1/2 inch intervals. You want to cut a diamond pattern in your dough.</li>
<li class="instruction">If you do it right you should end up with approximately 36 diamond-shaped pieces of baklava in the baking pan.</li>
<li class="instruction">Bake the baklava until golden brown, about 40 minutes depending upon how your oven cooks. You want to take it out when the top layer is golden brown.</li>
<li class="instruction">Remove the baklava from the oven and place on a wire rack to cool for 5 minutes.</li>
<li class="instruction">Now for the yummy honey syrup! Slowly drizzle the syrup over all the baklava which will still be warm.</li>
<li class="instruction">Let the baklava stand in the pan for a few hours before cutting all the way through.</li>
<li class="instruction">It will do a dance in your mouth from the first bite.</li>

It looks like pasta, it crunches like pasta, it is filling like pasta... but it is a vegetable! (Or fruit if you are one of those people who gets in arguments with people over whether or not things with seeds are technically fruits or vegetables... you can make that call.) But whether it is a fruit or a vegetable, it is delicious! It is slightly sweet, but fresh-tasting and not in the least bit heavy. When paired with this delicious thai basil pesto, it cannot be beat. Your stomach and brain will totally think you are indulging in a never-ending pasta bowl!<br />

<u><span style="font-size: large;">Sauteed Parmesan Spaghetti Squash</span></u><br />

<ul><li><span style="color: black;">1 small spaghetti squash</span></li>
<li>2 tbsp parmesan cheese</li>
<li>1 tbsp olive oil</li>
<li>Salt and pepper to taste</li>
</ul><ol><li>Preheat oven to 375</li>
<li>Slice spaghetti squash in half and scoop out the seeds from the middle</li>
<li>Pour warm water into the well of the squash halves where the seeds used to be</li>
<li>Wrap in foil and place on a baking sheet</li>
<li>Bake for one hour, the squash will be done when you scrape a fork into the flesh and strands form</li>
<li>Warm olive oil in a saucepan over high heat and add squash strands</li>
<li>Sautee for about 5 minutes, adding the parmesan at the very end</li>
<li>Mix with thai basil pesto, or any other sauce you'd like!</li>

<li style="text-align: left;">Using the back of a spoon, move around the bowl and apply pressure to break up any clumps of seeds and to better infuse the vanilla flavor into the sugar. Set aside.</li>
<li style="text-align: left;">In a medium-sized mixing bowl or bowl of a stand mixer, mix together cake flour, baking powder, baking soda, and salt.</li>
<li style="text-align: left;">Add the vanilla bean sugar and mix until well combined.</li>
<li style="text-align: left;">Add butter and mix on medium-low speed for three minutes. Because there is so little butter, you'll end up with a very fine crumb texture.</li>
<li style="text-align: left;">In a small mixing bowl, whisk together eggs, sour cream, oil, and vanilla extract until smooth.</li>
<li style="text-align: left;">Add the egg mixture to the flour mixture and beat on medium speed until just combined.</li>
<li style="text-align: left;">Slowly add milk and mix on low speed until just combined. The batter will be liquidy</li>
<li style="text-align: left;">Fill cupcake liners just over 1/2 full.</li>
<li style="text-align: left;">Bake for 14 minutes and then test to see if they are done. They are done when a toothpick comes out without wet batter stuck to it. The cupcakes should appear white with specks of vanilla bean. They should not turn a golden brown. If they are not done, test again in two minutes. If they are still not done, test again in another two minutes.</li>

So I decided to make pumpkin s'mores in the microwave with spicy pumpkin butter, nutella, and crunchy graham crackers. The flavor combination was just as beautiful as this fall day in Ithaca. This recipe could be personalized by adding nuts, regular chocolate, or apple butter. Customize it, make it your own! The best part is it only takes about 15 seconds to make this awesome treat and I bet you can't make just one!<br />

Sometimes just walking down a grocery aisle I will be reminded of people, places, and times of my life. This is why everyone is so nostalgic for the food they grew up with. For us university students, the 90's were all about running down grocery aisles, begging for gushers, grimacing at string cheese, and sniffing out the most sugary snacks with the rigor of a police dog. Although I cringe when I think of the chemicals, dyes, and SUGAR I ate in the 90's, I miss those snacks. These cinnabun muffins are inspired by my favorite breakfast treat- but less caloric, messy and guilt-inducing. They are sweet, soft, and crunchy all at the same time. </ul><ol><li>Preheat oven to 375 degrees, line a muffin tin with muffin cups</li>
<li>Beat the butter, eggs, oil, sugar, and sour cream together in a bowl</li>
<li>Slowly fold in the cake batter and cinnamon</li>
<li>Pour batter 2/3 of the way up in each muffin cup</li>
<li>Mix all of the ingredients of the streusel topping and add on top of muffin batter</li>
<li>Take a fork and gently swirl the streusel topping into the batter</li>
<li>Bake for 12 minutes and top with frosting if desired</li>
