Nutella Toasted Almond Rice Pudding


Fridge full of chinese food boxes of bland white rice from two nights ago??  Use them to make this delicious dessert!!

I created this recipe because our fridge was getting extremely cluttered after a group order of Chinese food.  Everyone was so stuffed from their meals that no one had room to eat the white rice sides. So... rice pudding!  I had some slivered almonds that I toasted to contrast the soft texture of the rice pudding.  The result is delicious: creamy, chocolatey and nutty.  And extremely budget friendly! Here's the recipe :)

Nutella Toasted Almond Rice Pudding
Yield: 6 servings
Time: 30 minutes
Cost: $$$$$

  • 2 cups of cooked rice
  • 1.5 cups half and half
  • 1.5 cups milk
  • 3/4 cup sugar
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1/2 cup Nutella
  • 2 tbsp cocoa powder
  • 1 tbsp slivered almonds, toasted
  • Pinch of salt
  1. Place milk, cream, rice, sugar, extracts, and salt in a large saucepan on medium heat
  2. Let it cook for about 10 minutes, than reduce heat to low for 10 more minutes, stirring occasionally 
  3. Add cocoa powder and Nutella, stirring for about 5 minutes
  4. Let chill in the refrigerator 
  5. Sprinkle toasted almonds on top to serve
