Fridge full of chinese food boxes of bland white rice from two nights ago?? Use them to make this delicious dessert!!
I created this recipe because our fridge was getting extremely cluttered after a group order of Chinese food. Everyone was so stuffed from their meals that no one had room to eat the white rice sides. So... rice pudding! I had some slivered almonds that I toasted to contrast the soft texture of the rice pudding. The result is delicious: creamy, chocolatey and nutty. And extremely budget friendly! Here's the recipe :)
Nutella Toasted Almond Rice Pudding
Yield: 6 servings
Time: 30 minutes
Cost: $$$$$
- 2 cups of cooked rice
- 1.5 cups half and half
- 1.5 cups milk
- 3/4 cup sugar
- 1 tsp almond extract
- 1 tsp vanilla extract
- 1/2 cup Nutella
- 2 tbsp cocoa powder
- 1 tbsp slivered almonds, toasted
- Pinch of salt
- Place milk, cream, rice, sugar, extracts, and salt in a large saucepan on medium heat
- Let it cook for about 10 minutes, than reduce heat to low for 10 more minutes, stirring occasionally
- Add cocoa powder and Nutella, stirring for about 5 minutes
- Let chill in the refrigerator
- Sprinkle toasted almonds on top to serve
