Toasted Almond Parmesan Pesto



Pesto is a wonderful condiment because it is big on flavor, texture and it is healthy for you.  It is very easy to add your personal twist to, and you can put it on pasta, crackers, cheese, eggs, tomatoes, pizza etc.  


This pesto is unique because it is full of toasty warmth from the almonds.  Then to contradict the richness of the nuts, a fragrant basil breaks through and then the salty bite of the parmesan.  It is so easy to make and will brighten up all of your dishes. 


Toasted Almond Parmesan Pesto
Yields: 1 cup pesto
Time: 5 minutes
Cost: $$$$$


  • 2 cups basil
  • 1/3 cup olive oil
  • 1/2 cup of almonds
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper
  1. In a saucepan over medium-high heat, toast the almonds until they smell fragrant and start to darken a little bit
  2. In a food processor blend basil, almonds, cheese and slowly add the olive oil 
  3. Season with salt and pepper
